Handcrafted Jam from Beira Baixa
Geocakes' Extra Tomato Jam is made in Idanha-a-Nova, at the heart of the Naturtejo Geopark, Portugal's first UNESCO Global Geopark. Prepared with whole tomato, with the fruit's skin worked into the recipe, this extra jam surprises with its originality, delivering a more intense flavour and an enveloping texture, true to the preserving methods passed down through generations in Beira Baixa.
Whole Fruit, Surprising Flavour
By keeping the tomato's skin in the preparation, Geocakes preserves part of the fruit's natural richness and achieves a jam with more character, more texture and greater depth of flavour. The result is a jam that balances the sweetness of sugar with the tomato's characteristic earthy note, lifted by a touch of cinnamon.
Rooted in Tradition, Made by Hands that Know How
Made by Chefs Raquel and Mário Rui Ramos, this extra jam follows handcrafted fruit-preserving methods passed down through generations in the Beira Baixa region. Every jar reflects respect for the fruit's right time and for the land that grew it, with no rush and no industrial shortcuts.
A Flavour with Territorial Identity
More than a jam, this extra preserve is a portrait of Idanha-a-Nova and the UNESCO-recognised territory. Every spoonful brings whoever tastes it closer to the landscapes, vegetable gardens and know-how that have defined Beira Baixa for generations.
A Recipe with Few Ingredients
The recipe combines only whole tomato, sugar and cinnamon, with no additives or unnecessary ingredients. It's this simplicity that lets the unique flavour of tomato be the true star of this extra jam, from the first spoonful to the last.

The Síria variety has a particular talent for capturing the land where it grows. On Herdade do Escrivão's sandy schist soils, with good southern sun exposure and Beira Interior's altitude, this white expresses exactly that: aromas that are both very strong and delicate, with notes of white fruit and citrus that linger on the nose and promise what the palate will confirm.
Síria: Beira Interior's White Variety
Síria is one of the most characteristic white varieties of inland Portugal, especially well suited to Beira Interior's continental climate and schist soils. At Herdade do Escrivão, where production follows organic farming principles in conversion to Demeter certification, Síria finds ideal conditions to express freshness, minerality and aromatic complexity. The vineyard covers 4.5 hectares, with PT-BIO-02 certified production and over 20 years of commitment to farming with no synthetic chemicals.
What You'll Find in the Glass
A bright citrine colour. On the nose, aromas that are very strong and delicate: ripe white fruit, fresh citrus and a subtle minerality that comes from the schist soils. On the palate, it's an elegant white, with well-balanced natural acidity, good volume and a clean, lasting finish. A wine that surprises with its intensity and wins you over with its elegance.
Territory and Production
Made and bottled at Herdade do Escrivão, in Castelo Branco, Beira Interior, under the leadership of viticulturist Miguel Valente and winemaker João Salavessa. The 80-hectare estate brings together wine, biodiversity, gastronomy and sustainability in a coherent, long-term project, within the Naturtejo Geopark territory.
Why Choose This White
Kimchi came from Korea and stayed. Made with fresh vegetables and a natural fermentation of at least 21 days, MAI Organic Kimchi has the intense, slightly spicy, unmistakable flavour that has won over tables around the world, with all the probiotic richness that only time and natural fermentation can create.
For Your Table, with 21 Days of Fermentation
Kimchi is a traditional Korean speciality made from fermented vegetables, served at every meal in its home country, as a side dish, in soups or simply on its own. The base is Chinese cabbage, seasoned with garlic, ginger, sweet paprika, chilli flakes and Himalayan salt, and left to ferment at room temperature for as long as the transformation needs. The result isn't just a side dish, it's a living food.
How MAI Kimchi Is Born
The vegetables are cut fresh, seasoned and left to naturally ferment for a minimum of 21 days. No preservatives, no pasteurisation, no shortcuts. The fermentation time isn't a detail: it's the condition for the natural probiotics and the tangy, spicy flavour profile characteristic of a well-made kimchi to develop. Every jar is a living food, still evolving.
Probiotic and Prebiotic at the Same Time
How to Use in the Kitchen
MAI Organic Kimchi is served plain as a starter or snack, pairs with grilled dishes, eggs, pulses and rice, and transforms any bowl or salad with acidity, texture and depth. The essential rule: never heat it. Heat kills the live microorganisms that make this food what it is. Always add it cold, at the end.
A Partner with the Same Values
MAI Organic Kimchi is part of the Geocakes partner selection because it shares the same principles: natural ingredients, handcrafted production and full transparency about the process. At Geocakes, a partner isn't chosen for what it sells, it's chosen for what it believes in.
Some cheeses demand a knife and a board. This one only asks for a moment's anticipation, good bread and good company. Sabores da Soalheira's Melted Sheep Cheese has the creaminess that stops conversation at the table, with the unmistakable flavour of Beira Interior's sheep's milk, with no concessions to industry.
Creamy by Nature, Intense by Origin
This melted cheese is made from Sabores da Soalheira's sheep cheese, with the silky, lump-free consistency only sheep's milk can achieve. It spreads easily, melts in the mouth with the richness that sets it apart from ordinary melted cheeses, and leaves a lasting flavour that recalls the milk's origin, the pastures and the know-how of those who make it.
How to Enjoy It
From Soalheira to Your Table
Sabores da Soalheira is one of the partners Geocakes selected for the same values that define the brand: traceable ingredients, handcrafted production and respect for Beira Interior's territory. This melted cheese is a sign of that productive vitality, the ability to innovate without losing identity, turning cured sheep cheese into a versatile product, ready to join any table without losing its character.
A Product with Its Own Character
Unlike industrially produced melted cheeses, this one doesn't flatten the flavour to an average. The raw material is real sheep cheese, guaranteeing a creamy, stable texture without compromising the product's identity. The result is a melted cheese with personality, distinguishable from the very first taste.
Herdade do Escrivão chose Touriga Nacional for its rosé, and the choice says a lot about who they are. A variety normally associated with great Portuguese reds, here vinified as rosé to reveal a different side: very lively, intense aromas, a natural freshness from Beira Interior's sandy schist soils, and the elegance only a terroir worked with patience and conviction can give.
Touriga Nacional as Rosé: a Choice with Character
Herdade do Escrivão's vineyard covers 4.5 hectares on sandy schist soils, with good sun exposure and no history of disease, in Beira Interior. Production follows organic farming principles, in conversion to Demeter certification, deepening the biodynamic path the estate began in 2019. Touriga Nacional, in this context, expresses itself with aromatic generosity and a natural acidity that defines this rosé's profile.
What You'll Find in the Glass
A lively rosé colour. On the nose, very lively, intense aromas, with fresh red fruit and a floral profile characteristic of Touriga Nacional. On the palate, it's an elegant wine, with fresh, well-integrated acidity, light and fluid, with a clean, appealing finish. A rosé to drink with pleasure and no ceremony.
Territory and Production
Made and bottled at Herdade do Escrivão, in Castelo Branco, Beira Interior, this 2025 DOC rosé comes from an estate that brings together wine, biodiversity, gastronomy and sustainability in a unique project. The 80-hectare estate is led by viticulturist Miguel Valente and winemaker João Salavessa.
Why Choose This Rosé
A sparkling wine that shouldn't exist, and that's exactly why it surprises. Made with red and white grape varieties vinified white, following the classical method with a second fermentation in bottle and manual riddling, this Brut from Quinta dos Termos is a genuine original from Beira Interior. A citrine colour, very fine bubbles and an elegant acidity that make it as good for opening a meal as for accompanying it from start to finish.
A Sparkling Wine Made by Hand, Using the Classical Method
Quinta dos Termos started with Baga, Rufete, Fonte Cal and Síria, varieties with naturally high acidity, and vinified them white. After blending, the base wine fermented with free yeasts directly in the bottle, followed by manual riddling. At disgorgement, the dosage was topped up with the wine itself, with no addition of residual sugar. The result is a genuine Brut, dry, fresh and with good structure.
What You'll Find in the Glass
A citrine colour with a bright appearance and very fine bubbles, a sign of method and patience. On the nose, fruity aromas with a slight floral note reminiscent of Cardo Serrano and brioche notes typical of second fermentation in bottle. On the palate, it's very flavourful, with a fresh, elegant acidity that carries through to the finish and invites the next sip.
Territory and Producer
Quinta dos Termos is the home of J. Carvalho Family Estates, a historic Beira Interior producer since 1945. With around 60 hectares of vineyards planted on granite soils at an average altitude of 500 metres, it grows 18 red and 6 white varieties, focusing on traditional varieties and sustainable production. This sparkling wine was awarded 16 points by Vinho Grandes Escolhas magazine.

Awaken your senses with this handcrafted selection of organic seasonings from Beira Baixa. Three intense flavours come together in one kit: aromatic thyme, smoked paprika paste and hot sauce (piri-piri) in a dosing dropper, ready to turn any dish into an authentic, territorial gastronomic experience.
Organic Intensity from Beira Baixa
This exclusive selection brings together three handcrafted organic seasonings made at the heart of the Naturtejo Geopark, the first Portuguese geopark recognised by UNESCO. Each flavour was developed by Chefs Raquel and Mário Rui Ramos, with over 40 years of HORECA experience, and reflects Geocakes' commitment to traditional recipes and ingredients from local producers in the Idanha-a-Nova region.
The organic thyme reveals earthy, aromatic notes characteristic of the region's Mediterranean flora. The paprika paste combines natural sweetness with balanced smoky touches, the result of peppers ripening under Beira Baixa's summer sun. The standout is the hot sauce dropper, made with Carolina Reaper and Trinidad Moruga Scorpion, two of the world's hottest peppers: a few drops are enough to set any dish ablaze, from seafood rice to grilled meat.
Kitchen Uses
Organic thyme seasons roasted meats, grilled vegetables and broths, reducing the need for salt. Paprika paste enhances stews, seafood rice and marinades, bringing depth and colour to dishes. The hot sauce dropper adds controlled heat to soups, sauces and snacks, drop by drop, without ever overpowering the recipe's original flavour. A versatile kit for anyone who likes to season their own way.
